Remember the first time I made biscotti? After that – making biscotti has turned into my favorite type of cookie to make. I think it has to do with the crunchy texture and how it’s perfect to dip in chocolate, nutella, jams, coffee, ice cream…and the list could probably go on for a while.
Point is I’m on a biscotti kick so I decided to keep it going and make some coconut biscotti!!
So I made it. And then I was hiding in the kitchen sneaking crunchy bites filled with coconut flavor. This stuff was amazing! I am probably going to have trouble sharing it with anyone, good thing bathing suit season is over! Haha!!
The only change I made to the recipe was adding a little more coconut flakes. The bag had about 2 ounces extra so I just threw it in. That’s living on the edge. Not really.
Anywho…go make it. Eat it with your morning coffee, try it as an afternoon pick me up, or just eat it whenever you feel like it. I won’t judge. ;)
