Birthdays are all about a good slice of birthday cake with some delicious frosting – but why not add some cookies into the mix. These carrot cake cookies are like little handheld cakes. It has it all plus frosting! Basically cake-to-go. I’m sold!
A co-worker’s birthday is today and I’ve heard she enjoys carrot cake so I thought it would be fun to make these.
And as an added bonus I made cream cheese frosting for the first time every. So yummy and much better than store bought!
