The Cookie Challenge // Week 20: Coconut-Almond Macaroons

When it comes to grocery shopping in our household we really live on the edge. For some reason we like to wait until we have almost nothing left. Just essentials like ice cream, rice cakes, and hummus. What? Those aren’t essentials?

So this week when I was ready to bake some cookies I realized we were out of eggs and vanilla. I rummaged through our pantry to see what was available and found a bag of coconut flakes, sliced almonds, almond extract, and condensed milk. I then did a little online research and found a macaroon recipe that I could adapt a bit.

The results – a chewy and crunchy cookie that I can’t stop eating. The photo I took makes it look burnt on the edges but it’s actually just crunchy – no burnt taste. :)

Original Recipe: Coconut Macaroons from Grab Your Fork

The original recipe just calls for a can of condensed milk and coconut flakes. I took the liberty of adding a handful of crushed almonds and 1 teaspoon of almond extract. Nothing too fancy. Just leftover pantry items making a delicious cookie.
