We are in week 13 of The Cookie Challenge that I start this year and I am feeling pretty good about it! Cookies were my enemy – I couldn’t even do the boxed cookie mixes without messing them up.
Thirteen recipes later I’ve had all success and I even created my very own recipe. Well more like adapted a recipe into something different and delicious.
I am very proud of myself (pats herself on the back) and I hope you all enjoy my little recipe. I used Elderflower syrup (you can find it at Ikea) to make a cookie and icing with a slight floral taste. So delicious, so right – go ahead and give it a try. Let me know what you think! ;)

Elderflower Cookies with Icing
Makes 24 cookies
(Recipe adapted from Savory Sweet Life)
1/2 cup of unsalted butter (1 stick)
3/4 cup of sugar
2 egg yolks
1 1/2 teaspoons of Elderflower Syrup
1 1/4 cups of all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon cream of tartar
1/8 teaspoon of salt
Icing:
1/2 cup confectioners sugar
1 tablespoon cold water
1/2 teaspoon Elderflower Syrup
Directions:
Preheat the oven to 350 degrees F. Cream the butter and sugar until creamy. Add egg yolks and Elderflower syrup. Once mixed add flour, baking soda, cream of tartar, and salt. Mix ingredients together.
You can use a cookie dough scoop or your hand and make same size cookie dough balls. Make sure not to flatten the dough. Place on baking sheet lined with parchment paper about 2 inches apart. Bake for 11-13 minutes. Cookies will flatten and have a cracked surface.
Let cookies cool on wire rack.
While cookies are cooling place confectioners sugar in a bowl. Add cold water and Elderflower syrup. Stir ingredients and glaze your cookies!
