Yesterday I had to improvise and get a little creative. With no time to go grocery shopping I had to figure out what to bake with the materials I had. Luckily, I had a stick of butter, eggs, flour, and sugar – the base of most cookie recipes.
I decided to make red velvet thumbprint cookies but had to use blue food coloring instead. It seems all the red had been used up throughout the holidays. The original recipe also called for a marshmallow frosting but I decided to just place 2 mini marshmallows in the center and let them melt in the oven.
Regardless the crazy mess in the kitchen (due to the move) I still managed to whip up a pretty good cookie. This recipe was easy and delicious. Give it a try – and don’t be shy to change the color! ;)
