The food truck movement seems to be one of the biggest trends in major cities. Recently I’ve discovered that Miami has some excellent food trucks out on the roads. Every Friday night about 30 food trucks (or a 1962 Airstream) gather in one location offering delicious gourmet food – from Mexican dishes to grilled cheese sandwiches. The experience was amazing and I definitely need to go again to try some more food.
By the time we began eating it was kind of dark and couldn’t take pictures of the delicious food – but these are the trucks that The Hubs + I checked out:
-CheeseMe: We tried a delicious mac n’ cheese pancake
Maybe it’s because I love mac n’ cheese – but these “pancakes” were everything I expected. The CheeseMe cooks get a mac n’ cheese patty shape and cook both sides to a prefect crisp making it look like a pancake. It is dee-lish!
-Frita Man: Regular Frita (A Cuban Hamburger)
Another delicious choice we made was the Frita (Cuban Hamburger) – it is a mix of ground beef with ground chorizo and shoestring potato sticks. My mind was blown. Must try! I went with the original version but they also offer it with different toppings.
-Guiseppe’s Italian Sausage: Spicy Italian Sausage with Peppers & Onions
The Hubs ordered this, but I couldn’t resist trying a little. It reminded me of the Italian sausages that you can only get while walking through Little Italy in NYC. Very delicious and a little spicy. Loved it!
-Kona Ice: Hawaiian Shave Ice – Pink Lemon Sour
I know shaved ice sounds pretty simple – but this was one of the best I’ve ever had. The ice was like snow! Nice and powdery. They offer tons of flavors, I usually go with cherry, but I changed it up and tried the pink lemon sour. Ah-mazing.
I am hoping that this coming Friday we can go try out some new trucks. Are there any popular food trucks by your area? If so, you should really go discover these goodies (that is, if you haven’t by now).

That’s it. I need to take a trip to Miami. I’ve never been, but more importantly, I need to try a mac n cheese pancake! Wild. I can’t wait to hear what new ones you try!
